Lately in Wellington, Florida (one of South Florida’s many popular areas), I have been eating a lot of flavorful burritos. I think I have tried all of different styles for burritos and have decided to move on to tacos! I was initially very excited. If tacos were even half as delicious as the burritos I had been eating recently then I was in for a treat. In retrospect though, I was wholly unprepared for what followed. I have never had a taco taste as good as the Mediterranean taco before in my life! I don’t know what I was expecting, but this was not it!

Usually, taco recipes is used, sometimes with added pork or even sausage, and combined with raw rice and seasonings of choice. This mixture is rolled into large cabbage leaves and cooked in a tomato based sauce. Cabbage can be used as a sturdier wrap, replacing lettuce for some heartier fillings. Partially cooked cabbage leaves still retain much strength and could also be used this way. Try making spring rolls using cabbage leaves.
